For the Noodles

  • 250g rice noodles

  • 200g chicken breast or shrimp

For the Sauce

  • 2 tablespoons fish sauce

  • 1 tablespoon soy sauce

  • Crushed peanuts
  • Lime wedges

Step 1 — Soak the Rice Noodles

Place the rice noodles in warm water for about 15–20 minutes until soft. Drain and set aside.

Step 2 — Prepare the Sauce

In a small bowl, mix fish sauce, tamarind paste (or lime juice), sugar, and soy sauce. Stir well until the sugar dissolves.

Step 3 — Cook the Protein

Heat oil in a large pan over medium-high heat. Add the chicken or shrimp and cook for 4–5 minutes until fully cooked. Remove and set aside.

Step 4 — Cook the Eggs and Vegetables
